Mediteranian Pot Stickers

Ingredients
2 cups cooked lentils
1/3 cup crumbled feta cheese
1/4 cup finely chopped onion
1 tbsp.snippedfresh dill weed
1clove garlic minced
1/2 tsp grated lemon peel
1/4 tsp pepper
12 7 inch square egg roll wrappers
2 tbsp water
2 tsp olive oil
1/2 cup hot water
Dollop plain Yogurt (optional)
Directions
Combine lentils, feta cheese, onion, dill, garlic, lemon peel, and pepper in a medium mixing bowl. Set aside
Cut a 6 inch circle from each egg roll skin (use an inverted 11/2 pint mixing bowl as a template.) Cover egg roll skins with plastic wrap to prevent drying. Place 2 tbsp. lentil mixture on bottom half of one circle, 1/4 inch from edge.
Brush edges lightly with water. Fold top half over, pressing with fingers to seal. Bring the corners of half circle together, overlapping slightly. Brush with water to seal. (Keep pot stickers covered to prevent drying.) Repeat with remaining filling and egg roll skins.
Spray a non-stick skillet with vegetable cooking spray. Heat oil over med.heat, add pot stickers. Cook 2 to 3 min or until bottoms of pot stickers are light golden brown. Add hot water. Cover and reduce heat to medium low. Simmer 8 to 10 min. or until water boils off and bottoms of pot stickers are golden brown. Serve Warm with a dollop of plain yogurt, if desired..Makes 6 servings.

Notes: when it says use a non stick skillet sprayed with vegetable cooking spray to warm the olive oil then cook the pot stickers, they mean use a non-stick skillet. Anything else will result in pot stickers that stick to the pan, and tear when you try to remove them. I know this from experience.. If you have to use a non stick skillet, you will need to increase the oil you use for the frying step.
