Irish Soda Bread
Mar. 17th, 2004 07:42 amI got this from the Stonyfields Farms web site. Made it on Monday to go with our dinner of corned beef and taters (yes we ate it on monday and didn't wait for today's "holiday"). The only adjustment I made was that I used 1/2 cup honey instead of the 1/2 cup white sugar recomended (If you decide to try this change add the honey at the same time you add the yogurt).

It turned out very well. It has the lovely crumbly texture of traditional Soda Bread, but it turned out nice and moist (which is my biggest problem with most bought soda bread it's too dry).
Next I want to try their maple spice cake recipe
